Magic Miso Soup

Howdy Fellow Food Frothers!!

I’ve got a real gem for you today in the way of convenience, taste and epic goodness.
Miso is a traditional Japanese fermented food, but its no surprise that this awesome tucker has been growing in popularity all over the world.

I love miso for its unique ability to add a heartiness to almost any meal, this combined with its impressive dick-load of nutrients makes for a killer dish.

  • Being a fermented food, miso is super good for your guts. This is awesome because soy products can be sometimes hard to digest and the fermentation process assists with this awesomely.
  • It contains all the essential amino acids making it a complete protein.
  • Start to finish this dish will take you under 10 minutes to make.
  • This soup serves as the perfect vehicle to get a good serving of veggies straight into ya.

Ingredients – Serves 2

  • Approximately 500ml of water
  • 2 big tablespoons of organic miso paste.
  • 1 serve of cooked organic buckwheat/soba noodles
  • Small knob of ginger – grated or mashed up.
  • ¼ long mild chilli finely sliced
  • ¼ bunch of coriander
  •  Finely sliced shallots
  • ¼ cup of Silken tofu or firm tofu
  • ¼ cup of mixed grated carrot and zucchini
  • 6 finely sliced snow peas
  • 2 button mushrooms

Method

  • Bring a pot of water to the boil and add the soba noodles – check packet instructions, they normally only take 4 minutes.
  • Bring another pot water (the 500ml) to the boil, Place all the other ingredients in the saucepan; the grated carrot and zucchini, finely diced tofu, snow peas, shallots, chilly, ginger, coriander, place the lid and bring back the the boil for just one minute.
  • Take off the heat, add the miso paste and whisk.
  • Put a little extra chilly, coriander and shallots on top to jazz it up, and you’re good to go, a super healthy dinner or lunch OR breakfast in less than 10 minutes!
