Peach, Watercress and Goats Cheese Salad

I bet you’re all peachy keen to find out what I’ve got in store for you today! It’s a winner.

I am so happy to be sharing this recipe; it’s one of my all time favourites. To me this salad is a celebration of summer, it’s super easy, healthy, and colourful, and the taste might just make you a little weak at the knees (be warned!).

Summer will be over before we know it so we might as well make the most of all of this epic stone-fruit whilst it’s around!


Here’s why you and your body will love this epic salad:

  • Watercress, besides from tasting freakin’ amazing, is super high in vitamins A, K, antioxidants and is a great source of calcium
  • Walnuts are packed with Omega 3 fatty acids
  • Peaches contain Vitamin C, beta-carotene and also a little bit of vitamin K and E
  • This dish is the perfect, simple, light and awesomely tasty summers day salad

 Ingredients – serves 4

  • 6 ripe peaches
  • 2 cups of fresh watercress leaves
  • ½ cup walnuts
  • Approximately ¼ cup of really good soft goats cheese (I LOVE Meredith Dairy Goats Feta)
  • The juice of 1 big orange
  • ¼ lemon
  • 1/3 cup of good quality extra virgin olive oil
  • Salt and pepper to taste


Method –

  • Start by preparing the dressing – place the orange juice in a saucepan, bring it to a gentle boil and reduce the juice down so that it thickens into a tangy glaze – this will take about 5 minutes for the juice to half in volume.
  • In the meantime get a nice big flat platter or plate and cut the peaches into quarters, remove the stone, and randomly scatter the peaches on the platter.
  • Next sprinkle the watercress over the peaches.
  • Crumble the goats cheese and walnuts over the top – make sure everything is nice and evenly spread out, so whenever someone has a mouthful they get a bit of everything!
  • Now back to the dressing; add the juice of the lemon to the orange glaze and whisk in the olive oil.
  • Spoon the dressing over the salad, finish with a little salt and pepper and you’re ready to rock! This salad is amazing just by itself but I love to eat it with some good sprouted wholegrain bread and tahini.  It also goes great with BBQ chicken breast.
